Can you move into sports analytics without a computer science or statistics degree?

I have a sport management background and some Excel experience. Is it realistic to build enough technical skill through projects and courses to compete for business analytics roles in sport?

For business analytics, yes. Start with a real question and build projects using clean data, spreadsheets/SQL and visualization. The portfolio should show that you can turn data into a decision. More technical modelling roles may require deeper statistics or programming, but not every analytics job has the same bar.
